Ingredients
- 3 to 4 very ripe bananas
- 1 1/4 cups sugar
- 1/2 cup salted butter, softened
- 2 large eggs
- 1/2 cup buttermilk
- 1 teaspoon vanilla
- 2 1/2 cups All Purpose Flour
- 1 teaspoon baking soda
- 1 teaspoon salt
Optional
- 1 cup chopped nuts
- 1 cup chocolate chips
Instructions
- Heat oven to 350°F
- Grease bottom of 9x5x3 loaf pan
- Mash 1.5 cups of bananas
- Beat sugar and butter in bowl
- Add eggs and beat until smooth
- Add bananas buttermilk and vanilla. Beat until smooth
- Stir in flour, baking soda and salt until moistened (lumps are fine)
- Stir in nuts
- Pour into pan
- Bake 1hr 15 minutes
