Ingredients
- 2 cups all-purpose flour, spooned into measuring cup and leveled-off
- 1/2 tsp salt
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1 tsp ground cloves
- 1 tsp ground cinnamon
- 1 tsp ground nutmeg
- 1-1/2 sticks (3/4 cup) unsalted butter, softened
- 2 cups sugar
- 2 large eggs
- 1 15-oz can 100% pure pumpkin (I use Libby’s)
Steps
- Preheat oven to 325F
- grease two 8x4” loaf pans with butter
- dust pans with flour
- in a medium bowl, combine:
- flour
- salt
- baking soda
- baking powder
- cloves
- cinnamon
- nutmeg
- In mixer bowl, beat on medium speed:
- butter
- sugar
- once blended, add eggs one at a time, beating after each
- continue beating until light and fluffy
- beat in pumpkin
- add flour mixture and mix on low speed
- turn batter into pans dividing evenly
- bake for 65-75 minutes
- let cool for about 10 minutes
