  • 2 cups all-purpose flour, spooned into measuring cup and leveled-off
  • 1/2 tsp salt
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1 tsp ground cloves
  • 1 tsp ground cinnamon
  • 1 tsp ground nutmeg
  • 1-1/2 sticks (3/4 cup) unsalted butter, softened
  • 2 cups sugar
  • 2 large eggs
  • 1 15-oz can 100% pure pumpkin (I use Libby’s)

Steps

  1. Preheat oven to 325F
  2. grease two 8x4” loaf pans with butter
  3. dust pans with flour
  4. in a medium bowl, combine:
    • flour
    • salt
    • baking soda
    • baking powder
    • cloves
    • cinnamon
    • nutmeg
  5. In mixer bowl, beat on medium speed:
    • butter
    • sugar
  6. once blended, add eggs one at a time, beating after each
  7. continue beating until light and fluffy
  8. beat in pumpkin
  9. add flour mixture and mix on low speed
  10. turn batter into pans dividing evenly
  11. bake for 65-75 minutes
  12. let cool for about 10 minutes
