Steps

  1. Preheat the oven to 250°F
  2. Dry pork by patting with paper towels
  3. Sprinkle and rub both sides with salt and pepper
  4. Once oven has reached 250°, place pork on a baking sheet and into oven
  5. Cook until internal temperature is 140°F (30-40 mins/lb)
  6. Remove from oven and rest, covered, for 5-10 minutes
  7. Add to skillet over high heat
    • drizzle of oil
    • 1tsp rosemary
    • 1-2 cloves garlic
  8. Sear pork chops in skillet 1 minute each side, while spooning oil/rosemary/garlic liquid from the bottom of the pan over the top until golden brown crust forms.
  9. Remove from the heat and let rest for 10 minutes before slicing and serving.
